Why?
Because that’s what native speakers do.
Example…

A: Well, first, I’m going to….
Q: What did you think of the movie?
A: Well, I thought….
Q: What do women want?
A: ___________
Also, it buys you a little extra time to think about what you’re going to say.
And it sounds a lot better than, “Umm…” or “Uuu…” or “Ahh…”
